Sourdough sandwich loaf!

This loaf is a fluffy loaf! It’s great by itself or with sandwiches - it’s not as airy/doesn’t have as many holes and is more uniform throughout, as seen in the second pic :)

Recipe:

500g bread flour

225g warm water

110g sourdough starter

10g salt

10g vanilla extract

20g sugar or honey

20g olive oil

I do 2 sets of stretch and folds 1hr apart; this dough is thick and not as elastic

Let rest 30m after last set of S&F, then shape into a uniform cylinder. Place in oiled bread pan and let bulk ferment overnight (I do ~14 hours because my house is a bit chilly)

Bake at 400°F for 25 minutes and 340°F for an additional 20 minutes or until the internal temp is 210° 🌸

Let cool completely before cutting to prevent tearing up the crumb & to finish cooking - or don’t, I won’t judge. I’m a sucker for warm bread 😜

Store in ziploc bags in the freezer if you don’t eat it within a couple days! I use stale bread for French toast :)
