Ingredients

For the Muffins

* 1 1/2 cups all-purpose flour

* 3/4 cup granulated sugar

* 2 teaspoons baking powder

* 1/4 teaspoon salt

* 1/2 cup milk

* 1/4 cup unsalted butter, melted

* 1 large egg

* 1 teaspoon vanilla extract

For the Cinnamon Streusel Topping

* 1/2 cup all-purpose flour

* 1/2 cup packed brown sugar

* 1/4 cup unsalted butter, softened

* 1 teaspoon ground cinnamon

Instructions

* Preheat oven and prepare muffin tin: Preheat your oven to 375°F (190°C). Line a 6-cup muffin tin with paper liners or grease it with butter and flour.

* Make the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Use a fork or your fingers to cut in the softened butter until the mixture forms coarse crumbs. Set this aside.

* Mix the dry ingredients for the muffins: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.

* Mix the wet ingredients: In a separate medium bowl, whisk together the milk, melted butter, egg, and vanilla extract until well combined.

* Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Stir just until a batter forms; do not overmix. A few lumps are okay.

* Fill the muffin tin: Divide the batter evenly among the 6 muffin cups, filling each about two-thirds full.

* Add the streusel: Sprinkle the prepared streusel topping generously over the batter in each muffin cup. Gently press the topping into the batter so it sticks.
