Pecan pie date balls 🥧

I am a sucker for something sweet, especially something that tastes like a pecan cluster or a pecan pie. This recipe is so easy to throw together and you really can do whatever you want with it. You can add more things. You can take away things you can dip them you can drizzle them. Lots of different options!

Here is the recipe 👇🏼

INGREDIENTS

9–10 large medjool dates, pitted

1 1/4 cup pecans (roasted or raw)

1/4 cup almonds (roasted or raw)

1/4 teaspoon vanilla extract (or listen to your heart)

1/4 teaspoon sea salt (optional)

1/2 teaspoon flakey sea salt (optional for topping)

1/4 cup Lily’s dark chocolate chips melted (optional for drizzle

1. Soak dates: Place dates in a heatproof glass bowl and fill the bowl with near boiling water to soften. Let them soak for 10 minutes, then drain well.

2. Blend ingredients: Add the dates, pecans, almonds, and vanilla to the bowl of a food processor. Add the salt only if your nuts are not already salted. Blend on High for about 30 seconds, stopping halfway to push down the sides. Everything should be well blended, but you should still be able to see small pieces of nuts in the mixture. It should stick together when you squish it in your hand.

3. Roll into balls: Roll the mixture into 12 balls, about 1-inch in diameter each, and place on a plate or into a storage container.

4. Top: Drizzle melted chocolate and flakey sea salt if you prefer or whatever other toppings you like.

5. Serve & store: For a softer texture, store in a sealed container on the counter for up to 7 days. For a firmer texture, store in a sealed container in the fridge for up to 2 weeks. If topping with chocolate I would suggest keeping them in the fridge so your chocolate does not melt depending on your environment. They can also be stored in the freezer for up to 3 months.
