Ultimate Cheesy Sourdough Loaf 🧀✨

This sourdough loaf turned out perfectly with an open, airy crumb and delicious pockets of melted cheese. If you love a crispy crust with cheesy goodness inside, this recipe is for you!

Ingredients

🔸 500g bread flour

🔸 375g water (75% hydration)

🔸 100g active sourdough starter (fed & bubbly)

🔸 10g salt

🔸 150g shredded cheese (cheddar, gouda, or your favorite)

Instructions

1️⃣ Mix the Dough

• Combine flour and water in a bowl. Let it rest for 30-45 minutes (autolyse).

• Add the sourdough starter and mix well. Cover and rest for 30 minutes.

• Add salt and mix until fully incorporated.

2️⃣ Bulk Fermentation + Cheese Add-In

• Perform 3-4 sets of stretch & folds over 4-5 hours.

• On the second or third stretch & fold, gently fold in the shredded cheese.

3️⃣ Shape & Cold Proof

• Lightly flour your surface, shape the dough into a round or batard.

• Place in a banneton or bowl lined with a floured towel. Cover and refrigerate overnight (8-16 hours).

4️⃣ Bake

• Preheat your oven to 475°F (245°C) with a Dutch oven inside.

• Transfer the dough onto parchment paper and score the top.

• Bake covered for 20-25 minutes, then uncover and bake for another 15-20 minutes until deep golden brown.

5️⃣ Cool & Enjoy

• Let it cool for at least an hour before slicing (if you can wait!). The cheese creates amazing pockets of flavor inside!

Everyone has their own goal when baking sourdough bread. Some like their crumb to be very hole-y and open, others prefer a slightly denser loaf, but I find that more and more people like a fluffy, closed crumb. One where the butter and jam won’t seep through the holes yet it’s very soft and fluffy.
