Biscuits avoine & brisures de chocolat (mini batch)
(donne 3 gros ou 4 moyens biscuits)

Ingrédients
½ tasse (50 g) de flocons d’avoine
¾ tasse (95 g) de farine tout usage (ou sans gluten)
½ c. à thé de bicarbonate de soude
¼ c. à thé de poudre à pâte
1 petite pincée de sel de mer fin
3 c. à soupe (45 ml) d’huile d’olive (ou d’huile de coco fondue)
3 c. à soupe (30 g) de sucre de coco
1 jaune d’œuf
3 c. à soupe (45 ml) de sirop d’érable
½ c. à thé d’extrait de vanille

Optionnel :
Brisures de chocolat
Chocolat noir en morceaux

Préparation
Préchauffer le four à 350°F (175°C) et tapisser une plaque de cuisson de papier parchemin.
Dans un bol, mélanger les flocons d’avoine, la farine, le bicarbonate de soude, la poudre à pâte et le sel.
Dans un autre bol, fouetter l’huile et le sucre de coco. Ajouter le jaune d’œuf, puis incorporer le sirop d’érable et la vanille.
Ajouter les ingrédients secs et mélanger juste assez pour ne plus voir de farine. Incorporer les brisures ou morceaux de chocolat, si désiré. Laisser reposer la pâte 10 à 15 minutes pour qu’elle s’hydrate.
Former 3 ou 4 biscuits sur la plaque en les espaçant bien.
Cuire 11 à 13 minutes, ou jusqu’à ce que les rebords soient dorés et que le centre semble juste pris (mais encore mou).
