Read more炊飯器で作る牛すじ大根(味噌煮込み)は、「下処理」と「味噌の扱い」で仕上がりがかなり変わりました。私は時間がない日に“ブチ込み炊飯”しがちなんですが、ここだけ押さえると一気に食べやすくなります。 まず牛すじ。買ってきたらサッと洗って、できれば一度下ゆで(または炊飯器で水だけ炊飯)すると臭みと余分な脂が落ちます。下ゆで後にぬるま湯で洗い、表面のアクや脂のかたまりを軽く取っておくと、味噌煮込みでもくどくなりにくいです。時間がない日は「熱湯をかけて5分置いて洗う」だけでも違いました。 具材は大根・こんにゃく・長ネギの頭(あれば)がおすすめ。大根は2〜3cm厚のいちょう切りにして、面取りしておくと煮崩れしにくく味もしみやすいです。こんにゃくはスプーンでちぎると味が絡みやすいので、私はいつもこの方法。こんにゃくも軽く下ゆでしておくと独特のにおいが減って食べやすいです。 味付けは、最初に「酒・みりん・しょうゆ少し・砂糖(好み)・だし(顆粒でもOK)・水」を入れて炊飯→最後に味噌、が失敗しにくかったです。味噌は長時間グツグツさせると香りが飛びやすいので、炊飯が終わってから溶き入れて10〜15分保温、または再加熱を短めにするのが私の定番。濃いめが好きなら、味噌を少しずつ足して調整すると安全です。 仕上げを「一度冷ます」と、大根がさらにしみしみになります。食べる前に温め直すだけで、牛すじはとろっと、味噌味はまろやかに。白米にも合うし、翌日はうどんにかけても最高でした。 最後に注意点。炊飯器はメーカーや機種で加熱が違うので、におい移りが気になる場合は内釜をすぐ洗うのがおすすめです。牛すじの脂が多いと吹きこぼれやすいので、容量に余裕を持って作ると安心でした。
