2 cups of warm rice
Boiled bamboo shoots 150g
15 g dried shrimp
Cake flour tablespoon 1
Tempura flour 30g
water tablespoon 4
Appropriate amount of frying oil

[How to make]
① Cut the boiled bamboo shoots into small pieces and put them in a bowl.
② Add dried shrimp, sprinkle with cake flour and mix.
③ Put mirin in a heat-resistant bowl and heat in a microwave to remove alcohol.
④ Add A to ③ and mix. Add bonito flakes and rub for 1 minute.
⑤ Put tempura powder in a bowl and mix while adding water tablespoon 4 little by little (tempura batter).
Divide the ingredients of ⑥ ② in half, add about 2 tablespoons of ⑤ and mix.
⑦ Scoop ⑥ into frying oil at 170 ℃ with a ladle etc. Put it gently while putting it on the skin of the pot. Wait until it hardens while pressing.
8. Turn it over halfway and change the top and bottom. Estimated frying time is 3 to 4 minutes.
When it is crispy, take it out and drain the oil. Make the other one in the same way.
Place kakiage on warm rice and pour tempura soup.

たけのこ×海老のかき揚げって、家で作ると「衣が重い」「バラける」「ベチャッとする」になりがち。私は何度か失敗して、ようやく安定したので、追加でコツをまとめます。 まず“たけのこかき揚げ レシピ”で大事なのは水分対策。ゆでたけのこは切ったあと、キッチンペーパーで軽く押さえて表面の水気を取るだけで衣の付きが変わります。ここで具材に薄力粉をまぶしておくと、天ぷら衣を入れたときにまとまりやすく、形がきれいになります(画像にあるポイント通り)。 次に衣。“タケノコ天ぷら”系は衣を厚くしすぎないのが軽さの秘訣です。天ぷら粉と水はしっかり冷やして、混ぜすぎない(粉が少し残るくらい)ほうがサクッと揚がりました。もし用意できるなら、水の一部を炭酸水にするとさらに軽くなります。 揚げ方は170℃目安。温度が低いと油を吸ってベタつき、高いと表面だけ先に色づきます。温度計がないときは、衣を少し落として“すぐ浮いて、細かい泡が出続ける”くらいが目安。お玉ですくって鍋肌に沿わせて入れると崩れにくいです。触りたくなりますが、固まるまで30秒〜1分は我慢。返す回数も最小限にすると散りにくいです。 具材のアレンジもおすすめ。干し海老は戻さずそのまま入れると香りが立って、たけのこの甘さと相性抜群でした。塩気が強い干し海老なら、天つゆの醤油をほんの少しだけ控えるとバランスが取れます。 最後に、たけのこの白い粉(チロシン)。初めて見たときは気になりましたが、うま味成分で食べても問題なし。気になる場合だけ取り除けばOKです。丼にするなら、揚げたてを温かいごはんにのせて、天つゆは“かけすぎない→足りなければ追いだれ”にすると、最後までサクサク感が残ります。
