🍫🍇 White Chocolate Raspberry Truffles 🍇🍫
Ingredients:
- 12 ounces white chocolate, chopped
- 1 stick unsalted butter, room temperature 🧈
- 5 tablespoons heavy cream 🥛
- 2 cups freeze-dried raspberries (measure then process into powder)
- 1 cup powdered sugar
Instructions:
1. Begin by pulsing the freeze-dried raspberries in a food processor until they turn into a fine powder. Set this raspberry powder aside for later use.
2. In a small saucepan, heat the heavy cream over medium heat until it reaches a simmer. Alternatively, you can microwave it for about 1 minute until it's hot and boiling. 🥛
3. Once the cream starts to boil, remove it from the heat. Stir in the unsalted butter until it is fully combined and smooth. If you notice any lumps, you can microwave the mixture for an additional 20 seconds, but be careful not to overheat it. 🧈
4. Add the raspberry powder to the mixture and stir well. Allow the mixture to cool to room temperature.
5. In a microwave-safe bowl, microwave the chopped white chocolate in 20-second intervals. Stir after each interval until the chocolate is completely melted. The residual heat will help melt any small pieces that remain.
6. Once the white chocolate has cooled to room temperature, combine it with the butter and raspberry mixture. Mix until everything is well incorporated. Cover the bowl with plastic wrap and refrigerate for 1-2 hours, stirring occasionally—especially during the first 30 minutes to prevent the butter from separating.
7. After chilling, let the mixture sit at room temperature until it is easy to handle. Use a small ice cream scoop or measuring spoon to shape the mixture into small balls.
8. Roll each truffle ball in powdered sugar and place them on a sheet of waxed paper. Repeat this process for all the truffles.
9. If the truffles start to stick to your hands, simply dust your hands with some powdered sugar to make rolling easier.
10. Store the truffles in an airtight container in the fridge for 7-10 days, or you can freeze them for 2-3 months. It's best to avoid storing them at room temperature to keep them from melting or losing their shape.
Enjoy your delicious truffles! 🍫✨
