I found a delicious peach, so I made a whole peach cake ♪
It's an annual dessert, but I couldn't find a good peach this year, so I finally made it 🙌
Hollow out the peach seeds, peel the skin, and fill it with custard cream.
Spread biscuits on a plate, put peaches on it, sprinkle napage on it, and put decorations on it.
But I forgot to buy biscuits today, so I baked bread crispy and put it on top 😅

~ Custard Recipe ~
15 g flour
Sugar 40-50g
Milk 200cc
1 egg
A little vanilla essence
a little liquor
Sift flour into a heat-resistant bowl, add sugar, and mix with a whisk.
Add milk and mix.
Add the beaten egg and mix.
Add vanilla essence and liquor (optional) and mix.
Heat in the microwave for 1 minute, take out once and mix well.
Heat again for 30 seconds and mix.
Heat and mix for 10 seconds until thickened.
Put the wrap on the cream and cool it down ♪
私が「桃カスタードケーキ」を作るときに意識しているコツをまとめます。丸ごと桃を使うレシピって簡単そうに見えるけど、桃選びと下処理で仕上がりがかなり変わりました。 まず桃選び。できれば“少しだけ柔らかい”くらいの完熟手前がおすすめです。硬すぎると香りが弱く、湯むき後に食感がパサつきやすい印象。逆に柔らかすぎると、種をくり抜くときに崩れやすくて見た目がきれいに仕上がりません。私は、手に取ったときにふわっと甘い香りがして、指で軽く押すとほんの少し弾力があるものを選びます。 湯むきは、私は「熱湯に10〜20秒→氷水」が一番失敗しにくかったです。長く茹ですぎると実がやわらかくなって割れやすいので短時間で。皮がスルッとむけると気持ちいいです。 種のくり抜きは、包丁で一周ぐるっと切れ目を入れてから、スプーンで少しずつ掘ると形が崩れにくいです。穴を大きくしすぎるとカスタードが重みで漏れやすいので、底は薄く残すイメージにしています。 レンジカスタードは、加熱の途中でしっかり混ぜるのがなめらかさの決め手でした。ダマが気になるときは、最後に一度だけザルでこすと口当たりが一気に良くなります。香り付けにバニラは多めが好みですが、洋酒は桃の香りを邪魔しない程度にほんの少しにしています。 土台は本来ビスケットが王道ですが、私もよく「トースト」で代用します。ポイントは“しっかりカリッと焼く”こと。桃の果汁とカスタードで湿りやすいので、焼き色がつくまでトーストしておくと最後までおいしいです。時間がある日はタルト台にすると、香ばしさと食感が増して満足感が上がりました。 仕上げの艶出し（ナパージュ）がない場合は、温めたジャムを少量の水でのばして塗るだけでもツヤが出ます。器に盛って、生クリームとミントを添えると一気に“夏のご褒美デザート”感が出るのでおすすめです。
