「マヨネーズなしでモス風にしたい」「できれば油少なめがいい」「コンソメなしでも作れる？」…私もまさにそれで試行錯誤しました。ここでは、作ってみて分かった“成功しやすいコツ”をまとめます。 まずマヨネーズ抜きの弱点は「コク不足」と「衣のつながりが弱い」こと。私は粉チーズ＋オリーブオイルで補うのが一番しっくりきました。粉チーズは香ばしさと旨み、オリーブオイルは油分のコク担当。混ぜた衣は、画像にもあるみたいに“とろ〜っとリボン状に落ちる”くらいがベストです。ゆるすぎると薄衣で剥がれやすく、固すぎると分厚くなってモスっぽさが消えました。 次に「コンソメなし」派の調整。コンソメの代わりに、 ・粉チーズを少し増やす（小さじ2→小さじ3くらい） ・塩をひとつまみ＋黒こしょう多め ・あればガーリックパウダーを少量 この辺で“ジャンク感”が出て満足度が上がりました。ケチャップの甘みと酸味もあるので、意外とコンソメなしでも成立します。 油少なめで揚げたい場合は、フライパンに1cm程度の油でOK。ただし温度が落ちやすいので、一気に入れすぎないのが最大のポイントです。目安は玉ねぎリング3〜4個ずつ。衣を入れた瞬間に細かい泡がシュワっと出るくらい（170〜180℃）をキープすると、炭酸水の効果も相まってカラッと仕上がります。 衣が剥がれるのを防ぐ小ワザも。玉ねぎは「1cmに切る→ほぐす→小麦粉でお化粧」を丁寧にやるほど成功率が上がりました。粉をまぶしたら一度軽くはたいて、余分な粉を落としてから衣へ。粉がダマになるとそこだけ重くなって剥がれやすかったです。 仕上げは、揚げたてより“少し冷めた頃”に衣の味が立つのが自作の良さ。最後に粉チーズと黒こしょうを追いがけすると、モス風の満足感が一気に上がります。翌日食べるなら、トースターで2〜3分温めてから最後に追いチーズすると復活しました。
