It's so rewarding to walk into my kitchen and snip off exactly what I need. Many of you might be wondering, 'what are green onions?' They're essentially young onions, harvested before the bulb fully forms. They're also known as scallions or spring onions in some regions. While my favorite method is definitely replanting green onion ends from the store, you can also start them from seeds or small bulbs, especially if you want to grow a larger batch. If you're considering 'starting onions from bulbs,' you'd plant small, immature onion sets directly into the soil. This usually gives you a quicker harvest than seeds, but still takes a bit more effort than just popping the ends of your store-bought ones into water or soil. Once your green onions have rooted in water (if you started them that way), or if you're planting small bulbs, it's time for the soil! How to plant green onions in soil is quite straightforward. I usually pick a sunny spot in my garden or a good-sized pot on my patio. They love at least 6 hours of sunlight a day. I make sure the soil is well-draining and rich in organic matter. When I plant them, I leave about an inch or two of the white base exposed above the soil line and space them a few inches apart. Regular watering is key, especially when they're getting established. I aim for consistently moist, but not soggy, soil. And what about garden friends? A common question I get is, 'can carrots and onions be planted together?' or 'are onions and carrots companion plants?' From my experience, yes! Onions, including green onions, are generally considered good companion plants for carrots. The strong scent of onions can help deter pests that target carrots, like carrot rust flies. Plus, they don't compete heavily for nutrients in the same way some other plants might. It's a win-win for pest control and maximizing garden space. I've had great success planting them side-by-side in my raised beds. Now, for the best part: using your homegrown harvest! If you're looking for 'green onion recipes,' the possibilities are truly endless. I love to chop them up fresh and sprinkle them over scrambled eggs, stir-fries, or baked potatoes. They add a fresh, slightly pungent kick. I also use them as a garnish for soups and noodle dishes. A simple green onion and ginger sauce is fantastic with steamed fish or chicken. You can even make a delicious green onion pancake! Having them readily available means I'm much more likely to add that fresh, vibrant flavor to my cooking without an extra trip to the grocery store. It's all part of that wonderful self-sufficiency journey!
