Goat cheese and caramelized onion fougasse

Recipe
goat cheese and onion fougasse:
* 2 Cups unbleached bread flour
* 1 Tsp active dry yeast
* 1 Large white onion
* 6 Tsp extra virgin olive oil
* 2 Tsp kosher salt
* 1 Oz grated cheddar cheese
* 8 Oz crumbled feta
* 1 tsp taste of Provence seasoning
* A drizzle of honey
* Flakey salt for garnish h
* Peel and dice onion.
* Bring a pan up to high heat, and add olive oil
* Add onion and cook until center is translucent and edges start to brown
* In a large bowl, combine flour, yeast, kosher salt, 4 Tbs olive oil, and 2/3rds Cup warm water.
* Knead for about 8 minutes, if the dough is still sticking to your hands you ain’t went long enough, Cover with a damp cloth, and rest for 30 minutes.
* Grate cheddar, and crumble feta.
* Sprinkle a work surface with flour, and slap your dough down, make a big rectangle and divide it into three equal pieces
* Working with one piece at a time, use a rolling pin to stretch out your dough into roughly 12" x 8" rectangles sprinkle lightly with flour as needed.
* Once you got em rolled out, line the center of each rectangle with sautéed onions and crumbled feta, all the way to the ends.
* Fold 2/3rds of dough over to cover the onion & feta mix. Wet your fingers in warm water, and fold up the other 1/3rd, pressing to seal.
* Lightly flour baguette pan (if you don’t got one take a kitchen rags, dampen it then shape it into the shape of a baguette pan and place it under a pice of parchment paper on a sheet pan). Place each baguette seam-side down in the baguette pan and allow to rest and rise for a further 20 minutes.
* Preheat oven to 450F.
* Use a food brush to paint the tops of the baguettes with water, then sprinkle with grated cheddar and taste of Provence
* Dust lightly with flour, and score a series of deep gashes in each baguette.
* Put the lid on (if you don’t have a baguette pan wrap in aluminum foil), and bake for 30 minutes.
* Remove lid, throw a couple of ice cubes in an oven safe pot or pan, put it in there with the bread and bake for 5 more minutes.
* Take the baguette pan out of the oven, and drizzle honey across baguettes and sprinkle flakey salt while the loaves are still hot
* Rest for 5 minutes, then remove from baguette pan
You can eat these bad boys on their own or make a simple garlic butter to dip them in
