Pumpkin Streusel Muffins
Ingredients:
1/2 cup avocado oil
1 1/4 cups pumpkin puree
1/4 cup almond milk
2 large eggs
1/2 cup granulated sugar
1/4 cup dark brown sugar
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
1 teaspoon ground cinnamon
1/2 teaspoon salt
Streusel Topping
5 tablespoons unsalted butter, room temperature
1/4 light brown sugar
1/4 cup granulated sugar
1/2 cup all purpose flour
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
Optional Glaze
2/3 cup powdered sugar
1–2 tablespoons almond milk
1/2 teaspoon vanilla extract
Preheat the oven to 375 degrees and line muffin pan with muffin liners.
Make Streusel Topping: Add the butter, light brown sugar, granulated sugar, salt, all purpose flour, and pumpkin pie spice to a small mixing bowl. Use your finger tips to work the butter evenly into the flour and sugar to form a streusel topping. Set aside.
Whisk together the avocado oil, pumpkin puree, almond milk, eggs, granulated sugar, dark brown sugar, and vanilla extract until well combined.
Next, fold in the all purpose flour, baking soda, pumpkin pie spice, cinnamon, and salt until well combined.
Scoop the batter into the prepared muffin pan, filling each muffin well 2/3 of the way full.
Sprinkle the streusel topping evenly over the muffin batter, pressing it gently into the batter to make sure it sticks.
Bake the muffins for 15-20 minutes or until a toothpick comes out clean when inserted. Remove from the oven and let cool for 5-10 minutes before adding a drizzle of glaze on each muffin.
Pumpkin Streusel Muffins are a fantastic way to celebrate the fall season, combining the rich flavors of pumpkin puree and spices to create a delectable treat. This muffin recipe features a unique streusel topping made with butter, sugars, and pumpkin pie spice, adding a crunchy texture that complements the soft muffin base. These muffins not only taste great but are also simple to prepare. Start by preheating your oven to 375 degrees, which is essential for achieving that perfect bake. As you mix the wet ingredients like avocado oil, eggs, and pumpkin puree with the dry ingredients including all-purpose flour and baking soda, the aroma of spices fills your kitchen, adding to the excitement. The incorporation of almond milk lends a subtle creaminess, making these muffins moist and tender. For the streusel topping, it’s important to mix the ingredients by hand so that the butter is just incorporated, preventing it from melting away in the oven. Pressing this topping into the muffin batter ensures it stays in place while baking, giving you that desired crunchy layer on top. Once you bake them for 15 to 20 minutes, waiting for the toothpick test to ensure they’re fully cooked ensures perfect results. If you want to take your muffins to the next level, consider drizzling them with an optional glaze made from powdered sugar, almond milk, and vanilla extract. Just a touch of glaze can elevate your muffins, making them even more enticing. These Pumpkin Streusel Muffins are perfect for breakfast, snacks, or even dessert! Whether you're hosting a fall gathering or enjoying a quiet morning at home, these muffins will be a hit. Enjoy them fresh out of the oven or store them for later, savoring the delightful flavors each time you take a bite.
