Pumpkin Spice Muffins
Ingredients:
1 3/4 cups flour
1 cup granulated sugar
1/2 cup brown sugar
1 tsp baking soda
2 tsp pumpkin pie spice
1/2 tsp cinnamon
1/4 tsp salt
2 large eggs
1 cup canned pumpkin puree
1/2 cup melted butter
1/4 cup milk
1 tsp vanilla extract
Optional Topping:
Sprinkle of cinnamon sugar
Instructions:
1. Preheat your oven to 350°F
2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, pumpkin pie spice, cinnamon, and salt.
3. In a separate bowl, beat the eggs lightly, then add pumpkin puree, oil, milk, and vanilla extract. Stir until smooth.
4. Pour the wet ingredients into the dry ingredients, and mix until just combined (don't overmix).
5. Divide the batter evenly among the muffin cups, filling each about 3/4 full. If you like, sprinkle streusel topping or cinnamon sugar on top of each muffin.
6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Let the muffins cool in the pan for about 5 minutes, then pop out of the muffin tin to enjoy!
These muffins are great warm, and they freeze well too! Just pop them in the microwave for a quick treat.
