Brown Butter Pumpkin Streusel Muffins
Pumpkin muffins:
- 1 cup pumpkin puree
- 2 eggs
- 1/2 cup Greek yogurt
- 1/2 cup butter, melted
- 1 tsp vanilla bean paste
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tbsp pumpkin pie spice
- 1 3/4 all-purpose flour
Brown butter streusel:
- 3 tbsp butter
- 1/4 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 tsp cinnamon
Vanilla bean glaze:
- 1 cup confectioners sugar
- 3 tbsp heavy cream
- 1 tbsp vanilla bean paste
Instructions:
- Preheat your oven at 375F
- In a small saucepan, add 3 tbsp of butter on medium-high heat, stir for 3-5 minutes until the butter starts to brown and smell nutty. Transfer to a small bowl to cool.
- To a small bowl add brown sugar, flour, cinnamon, and cooled brown butter and mix until you have coarse crumbs.
- In a large bowl, combine butter, granulated sugar, and brown sugar and mix. Add pumpkin puree, Greek yogurt, vanilla, and eggs, whisk until everything is well combined and smooth.
- To your wet batter, add all-purpose flour, baking soda, baking powder, salt, cinnamon, and pumpkin spice and mix until just combined.
- Line a muffin tray with muffin liners ( this recipe yields 8 muffins) and fill the liners 3/4 of the way, top each muffin with the brown butter streusel, and bake for 25-30 minutes.
- Once your muffins are done baking, set aside to cool. In a small bowl, combine confectioners sugar, heavy cream, and vanilla bean paste, mix until everything is well combined and you have a thick creamy glaze. Once the muffins have cooled completely, drizzle the glaze over them and enjoy!
