2 Eggs

1 Box Jiffy Mix (8.5 oz Box of Corn Muffin Mix)

5 oz Sour Cream

20 oz Cream Corn

20 oz Whole Kernel Corn (drained)

6 Tbsp Butter (melted)

Instructions

1. Preheat your oven to 325 Degrees Fahrenheit.

2. Spray your baking dish with nonstick spray.

3. In a large mixing bowl, combine your eggs, Jiffy Mix, sour cream, cream corn, whole kernel corn and your melted butter. Mix well.

4. Place mixture in 9x9 baking dish and spread evenly.

5. Place casserole in oven for 1 hour. Check at 45 minutes to make sure it’s rising. Continue cooking if it’s jiggly.

6. Let cool for 5 minutes and enjoy!

I’ve learned a few things over the years that make it even better, and I wanted to share them with you to help you master this comforting dish. One of the best things about this corn casserole is how fantastic it is as a make-ahead dish. If I'm hosting a big dinner, I'll often assemble it entirely the day before. Just mix all the ingredients in your baking dish, cover it tightly with plastic wrap or foil, and pop it in the fridge. When you're ready to bake, pull it out about 30 minutes beforehand to let it come closer to room temperature, then bake as usual at 325°F. You might find it needs an extra 5-10 minutes in the oven if it's still quite cold, so always keep an eye on it! This little trick saves so much stress on the day of the event, letting me focus on other dishes. Using Jiffy mix truly makes this recipe foolproof, which is why it’s a favorite for many, including me! When I'm mixing, I make sure to combine everything really well, but I try not to overmix. Just until there are no dry streaks of Jiffy mix left. For an extra rich and creamy texture, I sometimes swap out half of the sour cream for softened cream cheese. It makes it incredibly decadent!
