Corn casserole

Momma had been going on and on for days about how she wanted corn casserole and how her sister used to make it for her but she didn’t know how. So at her request I made her some. However, she changed the recipe and I used Mexican Cornbread for the first time ever.

Turned out absolutely delicious 🤤

Served with Mac and Cheese.

👩🏻 Home Recipe 🍳

2 bags of Mexican Cornbread mix

3 eggs

1/2 cup of sour cream

4 ears of corn (boiled and chopped off ears)

2 cans of cream style corn

**PREHEAT OVEN TO 350**

1: Chop corn off the cob and place in water to boil till softened. (Can also be boiled on cob and then chopped off but I do it the opposite way)

2: After corn is boiled, mix everything together.

3: Dump cans of corn, boiled corn, sour cream, cornbread mix and eggs together and stir until smooth a creamy.

4: Make sure pan is greased.

5: Pour mixture into pan and bake until toothpick comes out clean when inserted. (About 25 mins)

OPTIONAL:

Add cheese on top and bake another 10 mins.

Serve.

Makes enough for 8 servings (depending on how big you serve them.)
