One Pan Apple and Sausage Roast 🍎🍠

This recipe tastes like cozy season. 🧣👢 Sweet, savory with aromatic fall spices like cinnamon and nutmeg. Even the colors of the ingredients resemble fall leaves. 🍁 🍂 As a vegan I like to use the plain beyond meat sausages but apple flavored Field Roast sausages work great too. I know because I’ve made this so many times, this is my go-to cozy season recipe. Feel free to add fresh herbs like thyme and rosemary 🪴 too. If you’re looking for a simple cozy and healthy meal prep idea this is for you.

Fall Squash and Sausage Roast

3 servings

Ingredients:

➖2 large vegan sausages

➖1/2 chopped sweet onion

➖1/2 C chopped pumpkin or squash

➖1 C chopped fingerling potatoes

➖1/4 Tsp black pepper

➖2 sweet red apples

➖6 Medjool dates

➖ 4 Tbsps olive oil

➖1 Tsp cinnamon

➖1 Tsp nutmeg

➖1 Tsp cloves

Step 1:

Preheat the oven to 375 degrees Fahrenheit. Chop the sausage and all the produce into large pieces.

Step 2:

Add all of these chopped ingredients into a large baking dish along with the spices and oil, then toss together well.

Step 3:

Bake for 35 - 45 minutes, mixing all of the ingredients occasionally. This recipe is best when the sausage becomes crispy.
