This is such an easy appetizer idea that’s healthy, refreshing and such a crowd pleaser! I suggest using any type of skinny cucumber so just avoid the thick pickling cucumbers. 🥒
Ingredients:
- 3 cucumbers
- half block of feta cheese (I like dairy free Violife)
- half of the juice of one lemon
- 1/2 tsp salt & pinch pepper
- pinch red chili flakes
- 2.5 tbsps extra virgin olive oil
- 1 tbsp red wine vinegar
- Optional: serve with pita chips or crackers
Step 1:
Slice cucumbers into one inch pieces and have skin of cucumber pieces touching cutting board then smash using a large knife.
Step 2:
Add cucumbers to a large plate, then make the dressing.
Step 3:
Add all of the rest of the ingredients except the feta to a small jar and mix together for the dressing.
Step 4:
Drizzle the dressing on the cucumber pieces and the feta cheese on the pieces as well. You can serve these with pita chips or crackers to make them easier to eat.
