Chicken Gnocchi Soup "Marry Me" Style
Ingredients
2 cups cooked, shredded chicken
1 Tbsp olive oil
2 Tbsp butter
4 garlic cloves, minced
5–6 sundried tomatoes, chopped
1 Tbsp tomato paste
3 Tbsp flour
1 ½ Tbsp Marry Me Blend
1 tsp sea salt
1 (16 oz) pkg potato gnocchi
1 ½ cups heavy cream
4 cups chicken stock
3 Tbsp white wine
½ lemon, juiced
1 cup Spinach, chopped
1 cup Parmesan, grated
1–2 cups cherry tomatoes
1. Heat olive oil and butter in a large pot. Sauté garlic until fragrant.
2. Stir in sundried tomatoes and tomato paste. Add flour, seasoning, and salt.
3. Toss in gnocchi and sear lightly, 1–2 minutes.
4. Lower heat; slowly whisk in cream, stock, wine, and lemon juice until smooth.
5. Stir in chicken, kale, and tomatoes (if using). Simmer 10–12 minutes until gnocchi is tender.
6. Add Parmesan; stir until melted and creamy.
