2 tbsp butter
3 cloves garlic (smashed)
Fresh thyme (optional)
Pasta:
200g fettuccine or linguine
1 tbsp butter
2 cloves garlic (minced)
1 cup heavy cream (240ml)
3/4 cup grated parmesan (75g)
Salt & black pepper
To finish:
Fresh parsley
Extra parmesan
👩🍳 Instructions
1. Cook the pasta
Boil salted water and cook pasta until al dente.
Reserve 1/2 cup pasta water, then drain.
2. Make the creamy sauce
In a pan, melt butter and sauté garlic for 30 seconds.
Add heavy cream and simmer for 3–4 minutes.
Stir in parmesan until smooth and creamy.
Season with salt and pepper.
Add pasta and toss, using a splash of pasta water if needed.
3. Cook the steak
Pat steaks dry and season generously with salt and pepper.
Heat oil in a pan until very hot.
Sear steak 3–4 minutes per side (depending on thickness).
Add butter, garlic, and thyme, then baste for 1–2 minutes.
Let rest for 5 minutes, then slice.
4. Assemble
Plate the creamy pasta
Lay sliced steak on top
Drizzle garlic butter from the pan over everything
Finish with parsley and parmesan
✨ Tip: Letting the steak rest before slicing keeps it juicy—don’t skip it.
