Peanut butter mug cake

My late-night sweet tooth has been loving these microwave mug cakes lately, and this peanut butter version might be my favorite one yet.

I used:

• 1½ tbsp melted butter

• 1½ tbsp creamy peanut butter

• 1 egg yolk

• 2 tbsp brown sugar

• 1½ tbsp milk

• 1/8 tsp vanilla extract

• 2 tbsp flour

• 1/8 tsp baking powder

• Pinch of salt

• ½ tbsp chocolate chips

• ½ tbsp peanut butter chips

First, whisk together the melted butter, peanut butter, egg yolk, brown sugar, milk, and vanilla until smooth. Then stir in the flour, baking powder, and salt. Fold in the chocolate chips and peanut butter chips.

Microwave for about 55 to 70 seconds depending on your microwave. I like mine slightly underbaked in the center so it stays soft and gooey instead of dry.

Next time I may add an extra spoonful of peanut butter in the center for an even richer molten texture.
