I used to struggle getting my eggs just right and my potatoes perfectly golden, but after some trial and error, I've got a few tips to share that will make your breakfast dreams come true! First, let's talk about those glorious cheesy scrambled eggs. The key to fluffy, perfect scrambled eggs is not to overcook them. I usually whisk my eggs vigorously with a splash of milk or cream – it makes them extra tender! For four eggs, I’d add about a tablespoon of milk. Then, heat a non-stick pan over medium-low heat with a pat of butter. Pour in your egg mixture. As they start to set, gently push the cooked egg from the edges towards the center, allowing the uncooked egg to flow underneath. Do this slowly. The magic happens when you add your cheese! I love a good sharp cheddar or a blend of Monterey Jack and Colby. Sprinkle it in during the last minute of cooking, just as the eggs are still a little wet. Cover the pan for about 30 seconds – this creates perfectly melted, gooey cheese pockets without overcooking the eggs. Season with salt and freshly ground black pepper to taste.
