🌯 Cheesy Beef Burrito with Creamy Smoky Sauce🔥
Ingredients
Burrito Filling
• 1 lb ground beef
• 1 small onion, diced
• 1 bell pepper, diced
• ½ cup corn
• 2 cloves garlic, minced
• 1 packet taco seasoning
• ½ cup beef broth
• 1 cup shredded cheddar cheese
Sauce (or Dip 😉)
• ¼ cup ketchup
• ¼ cup Greek yogurt or sour cream
• ½ tsp smoked paprika
• ¼ tsp cayenne pepper (adjust to taste)
• ½ tsp garlic powder
• ½ tsp onion powder
• Salt, to taste
• Black pepper, to taste
For Assembly
• Large flour tortillas
• Extra shredded cheddar cheese
Cook the Filling
1. Heat a pan over medium heat.
2. Sauté onion, bell pepper, and corn until softened.
3. Add ground beef and cook until browned, breaking it up as it cooks.
4. Add garlic and taco seasoning. Stir and cook for 30 seconds.
5. Pour in beef broth and let simmer until slightly thickened.
6. Add shredded cheddar cheese and stir until melted and combined.

Assemble the Burrito
1. Lay a tortilla flat.
2. Spoon the beef mixture into the center.
3. Sprinkle extra cheddar cheese on top.

Fold & Toast
1. Fold the sides of the tortilla inward, then roll tightly.
2. Place seam-side down in a clean pan over medium heat with no oil.
3. Toast until golden brown, then flip and toast the other side.
Make the Sauce
1. In a bowl, combine ketchup, Greek yogurt or sour cream, smoked paprika, cayenne, garlic powder, onion powder, salt, and pepper.
2. Mix until smooth.
3. Set aside (or chill for 10–15 minutes for better flavor).
