Creamy Chicken Pasta
Ingredients:
- 1lb boneless, skinless chicken thighs, diced to about 1 inch thick pieces
- 16oz Rotini Pasta
- 1 bag of spinach
- 1 container of cherry tomatoes, cut in half
- 1 1/2 cups heavy whipping cream
- 1 cup shredded cheddar cheese
- 1 cup shredded white cheddar cheese
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 onion, diced
- Minced garlic
- 2 tbsp butter
- 8oz cream cheese
- salt and pepper
- garlic powder
- onion powder
- paprika
- olive oil
- 1/4 cup white white or white cooking wine
Directions:
1. Put your diced chicken in a bowl and season with salt, pepper, garlic powder, onion powder, and paprika.
2. Place a large pot on the stove to medium high heat and add olive oil (enough to coat the bottom) and butter. Allow butter to melt and oil to heat up.
3. Add chicken to pot and cook until done.
4. In a separate pot, boil your noodles until al dente.
5. Once chicken is done, add tomatoes, bell pepper, minced garlic and onion. Cook until veggies are soft.
6. Add white wine or cooking wine and cook for about 5 minutes, then add cream cheese, allowing the cream cheese to melt. Stir occasionally.
7. Once cream cheese is melted, add heavy whipping cream. Adjust heavy whipping cream to your desire.
8. After allowing everything to heat back up, add your cheese. Stir until cheese is melted completely.
9. Add spinach and allow to wilt.
10. Once spinach is cooked down, add drained pasta and stir to incorporate.
