—Ingredients—
1 lb Rigatoni pasta (or any pasta of choice boil according to package instructions)
3 chicken breasts
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon black pepper
1 teaspoon oregano
1 teaspoon salt
2 tablespoons olive oil
—Alfredo Sauce Ingredients—
1 stick of unsalted butter
2 tablespoons minced garlic
2 cups heavy cream
2 cups Parmesan cheese
1 teaspoon Italian seasoning
1/4 teaspoon black pepper
1 teaspoon dried parsley
Fresh chopped parsley for garnish
Parmesan cheese for garnish
1. Dice the chicken into bite size pieces and place in a large bowl. Season the chicken with 1 teaspoon each of garlic powder, onion powder, paprika, black pepper, oregano, salt and Toss well.
2. Heat a large skillet over medium-high. Once hot, add the oil and Add the chicken to the skillet and cook for about 7-8 minutes on each side, or until browned on the outside and cooked through.
3. While the chicken is cooking, bring a pot of salted water to a boil for the pasta. Once boiling, add the pasta and continue to boil until tender (about 8-10 minutes). Reserve about ½ cup of the starchy cooking water just before draining the pasta (just in case you need it to thin out the sauce).
4. Remove the chicken to a clean plate and turn the heat under the skillet down to medium-low.
5. Add the butter and minced garlic to the same skillet. Stir and cook the garlic in the melted butter for about two minutes, scraping the browned bits from the bottom of the skillet as you stir.
6. Add the heavy cream, Italian seasoning, black pepper, dried parsley and whisk to combine, Allow the cream to come up to a simmer.
7. Once the cream is simmering, add the grated Parmesan to the skillet. Continue to whisk and stir until the Parmesan has melted into the sauce and the sauce has begun to simmer. Simmer the sauce for a few minutes, or until it becomes slightly thicker.
8. Add the drained pasta to the skillet with the creamy sauce and toss to combine. If the sauce becomes too thick, add in the reserved pasta water and toss to combine with the sauce. Add the chicken back in and toss again.
9. Before serving garnish with fresh chopped parsley and more grated Parmesan cheese and enjoy!
