Salmon and Roasted Potatoes Meal Prep

Lemon Dill Salmon 🐟
Ingredients:
-1 lb fresh salmon
-juice of half a lemon
-1 tsp dried dill
-1 tsp salt
-1 tsp pepper
Instructions:
-preheat oven to 400F
-place salmon in baking dish and coat with above
-cook for ~12 minutes until internal temp is 145F
Roasted Zucchini 🥒
Ingredients:
-4 medium zucchinis
-2 tbs olive oil
-2 tsp salt
-2 tsp black pepper
Instructions:
-preheat oven to 400F
-cut zucchini and place in bowl
-coat with salt, mix well, and set aside for 10 min
-strain out excess water and pat dry
-add back into bowl with oil and pepper; mix well
-place on baking sheet and roast for 35 min
Crispy Smashed Potatoes 🥔
Ingredients:
-1.5lbs baby potatoes
-3 tbs olive oil
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp paprika
-2 tsp dried thyme
-2 tsp dried rosemary
Instructions:
-boil potatoes for 10 min until fork tender
-strain water and place on a baking sheet to dry
-preheat oven to 400F
-drizzle potatoes with oil
-smash with a spatula until they are a quarter-inch thick and coat with above seasoning mix
-drizzle with more oil
-roast for 35 minutes until golden
Lemon Garlic Herb Mayo Sauce 🍋
Ingredients:
-1/3 cup mayo or Greek yogurt
-juice of half a lemon
-3 whole garlic cloves, peeled
-handful of fresh parsley
-1 tsp salt
Instructions:
-add ingredients into a blender; blend until smooth
-store in airtight container in the fridge for up to 1 week
