Lemon Garlic Chickpea Fritters

Crispy lemon garlic chickpea fritters packed with fresh flavor. A healthy, vegan appetizer or snack made with simple ingredients.

🧾 Ingredients

1 can (15 oz) chickpeas, drained and rinsed

¼ cup chickpea flour

2 tbsp olive oil (plus more for cooking)

Zest of 1 lemon

2 tbsp fresh lemon juice

2 cloves garlic, minced

2 tbsp fresh parsley, chopped

½ tsp ground cumin

½ tsp salt

¼ tsp black pepper

👩‍🍳 Instructions

First, mash the chickpeas in a large bowl until mostly smooth with some texture remaining.

Next, add the chickpea flour, olive oil, lemon zest, lemon juice, garlic, parsley, cumin, salt, and pepper.

Then, mix until a thick, scoopable mixture forms.

After that, heat a skillet over medium heat and add a thin layer of oil.

Next, scoop about 2 tablespoons of the mixture and flatten slightly in the pan.

Then, cook for 3–4 minutes per side, until golden and crispy.

Finally, transfer to a plate lined with paper towels and serve warm.

Extra crispy: Chill the mixture for 15 minutes before frying.

Baked version: Bake at 400°F (200°C) for 20 minutes, flipping halfway.
