The green pepper pork noodle recipe I posted earlier got some great feedback, so here’s another version—this time, a non-spicy noodle dish. It’s made with tender shredded pork, eggplant, and shiitake mushrooms. Since shiitake mushrooms are naturally full of umami, you don’t need a ton of seasoning.
