Apple Cider Glazed Chicken

This was originally supposed to be chicken thighs but I grabbed a bag of drumsticks/wings out of the freezer instead, and didn’t realize it until they were thawed 😬 But I think I liked these more!

🧂 Ingredients

For the Chicken:

• 4 boneless, skinless chicken breasts (or thighs if preferred)

• 1 tbsp olive oil

• Salt and pepper to taste

• ½ tsp garlic powder

• ½ tsp paprika

For the Apple Cider Glaze:

• 1 cup apple cider (not vinegar)

• 2 tbsp apple cider vinegar

• 2 tbsp Dijon mustard

• 2 tbsp honey or pure maple syrup

• 1 tbsp soy sauce (or coconut aminos for lower sodium)

• 2 garlic cloves, minced

• 1 tsp fresh thyme (or ½ tsp dried)

• 1 tbsp butter

🍳 Instructions

1. Season the Chicken

Pat chicken dry. Season both sides with salt, pepper, garlic powder, and paprika.

2. Sear the Chicken

Heat olive oil in a large skillet over medium-high heat.

Add chicken and sear for 4–5 minutes per side until golden brown.

Remove chicken from the pan and set aside.

3. Make the Glaze

In the same skillet, add minced garlic and sauté for 30 seconds.

Pour in apple cider, apple cider vinegar, Dijon mustard, honey, soy sauce, and thyme.

Stir, scraping any browned bits from the bottom of the pan.

4. Reduce the Glaze

Bring to a simmer and cook for 6–8 minutes, stirring occasionally, until the sauce thickens and reduces by about half.

5. Finish Cooking the Chicken

Return chicken to the skillet, spoon glaze over the top, and cook for another 5–7 minutes until chicken is cooked through (internal temp 165°F). Or throw in the oven at 375

6. Add Butter for Shine

Turn off the heat and swirl in the butter until melted and glossy. Spoon glaze over chicken before serving.

🌿 Optional Add-Ins

• Add apple slices to the skillet when you add the glaze for a rustic touch.

• Sprinkle fresh thyme or rosemary on top before serving.

• Serve over mashed cauliflower, wild rice, or roasted Brussels sprouts for a balanced meal.
