Lemon-Garlic Squash & Zucchini Noodles (Savory Citrus Finish)
Ingredients
• Ramen or wheat noodles (1–2 packs, seasoning discarded)
• 1 yellow onion, sliced
• 1 green bell pepper, sliced
• 1 yellow squash, cut into batons
• 1 zucchini, cut into batons
• 2–3 cloves garlic, minced
• Neutral oil or sesame oil (for sautéing)
Sauce (mix separately)
• 1½ tbsp soy sauce
• 1 tsp fish sauce (don’t skip — this is the umami backbone)
• 1–2 tbsp lemon Squirt (to taste; start light, add more if you want brightness)
• Optional: pinch of black pepper or chili flakes
Method (Order matters)
1. Cook the noodles
• Boil just until barely tender.
• Drain and set aside. Do not overcook — they finish in the pan.
2. Build the base
• Heat oil in a wide pan or wok over medium-high.
• Add onions first. Sauté until translucent and lightly golden.
• Add garlic. Stir 20–30 seconds only (don’t burn it).
3. Vegetable structure
• Add bell peppers, zucchini, and yellow squash.
• Toss and sauté until vegetables are tender-crisp, not mushy.
• You want bite and gloss, not steam.
4. Combine
• Add noodles directly into the pan.
• Pour sauce evenly over everything.
• Toss continuously so noodles absorb flavor instead of pooling sauce.
5. Finish
• Cook another 1–2 minutes until noodles tighten and lightly crisp in spots.
• Taste. Adjust with a tiny splash more lemon Squirt or soy if needed.
