Lemon Blueberry Cake
Ingredients:
• 1 ½ cups all-purpose flour
• 1 ½ teaspoons baking powder
• ½ teaspoon salt
• ¾ cup granulated sugar
• 1 stick (½ cup) unsalted butter, softened
• 2 large eggs
• 2 teaspoons lemon zest
• 1 teaspoon vanilla extract
• ¼ cup fresh lemon juice
• 1 cup fresh blueberries
• ½ cup whole milk
Instructions:
1. Preheat your oven to 350°F (175°C). Coat an 8-inch round cake pan with grease and flour, or line it with parchment paper.
2. In a small bowl, combine the flour, baking powder, and salt, whisking until well mixed. Set aside.
3. In a large bowl, cream together the softened butter and sugar with an electric mixer until the mixture is light and fluffy.
4. Mix in the eggs one at the time.
Then stir in the lemon zest, vanilla extract, and fresh lemon juice.
5. Gradually mix the dry ingredients into the wet batter, alternating with the milk.
6. Gently fold in the fresh blueberries.
7. Transfer the batter to the prepared cake pan, then use a spatula to level the surface.
8. Bake for 30-35 minutes.
9. Once cooled, drizzle with a lemon glaze
LEMON GLAZE RECIPE
Ingredients
.1 tablespoon butter softened
.1 cup powdered sugar
.2-3 tablespoon heavy cream or half n half
.1 tablespoon lemon zest about 1 large lemon
.1 tablespoon lemon juice about 1 large lemon
.¼ teaspoon vanilla
Instructions
- Place all the ingredients in a bowl, starting with 2 tablespoon of heavy cream.
- Mix until well combined and smooth. I like to use a whisk.
- If needed, add more cream 1 teaspoon at a time until desired consistency is reached.

- Use on cakes, pound cake, cookies, cinnamon rolls, scones, or other baked goods.
