Cookies At Midnight: Espresso Chocolate Chip
you watch my videos, you already know the drill: when my mental health gets droopy, I bake cookies. Do I always eat them? No ma’am. I have a couple, and the rest of the dough stays in my fridge for when my friends and family start begging.
And despite being a big girl, my sweet tooth is actually tiny. I’m here for the therapy, not the sugar. Cookies from scratch were something I always felt like I failed at, so now I take all my anxiety, stress, and brain chaos and channel it into perfecting my skills and developing my own recipes and vibes.
I always say: it’s not the result, it’s the process. Making something in the middle of the storm going on in my head is my Zen.
One of my favorite ice creams EVER—thanks to my mom—is Edy’s Espresso Chip. It’s salty, chocolatey, coffee heaven. So of course I had to turn that into a cookie, especially now that I’m obsessed with the chocolate chip base I’ve developed to my liking.
And when I say I love coffee… I mean I LOVE coffee. I drink several a day and I’m not your typical latte girl. I like it straight-up, black, and strong. I genuinely enjoy the flavor.
So I hope you try these. I hope you love these.
And I hope they bring you a little peace through whatever you’re dealing with tonight. 🤎☕️🍪 #holidayeats #lemon8challenge #mentalhealthawareness #recipes #cookierecipe

For those wanting to replicate the salty, chocolatey, and coffee flavors reminiscent of Edy’s Espresso Chip ice cream, balancing the salt and espresso is key. Experimenting with cookie dough and flavor profiles can be a fun way to personalize your baking experience.
