Everything I Did Wrong Making Sourdough 🍞

I have been making sourdough for about 4 months now and my bread has always turned out pretty good. I’d have to say this is probably my worst loaf yet (or I’m starting to become more critical of my loafs) due to some silky mistakes. At the end of the day the loaf was still delicious! and was great made into a grilled cheese 🧀

1. water - too much water 💧AND it was cold water 🥶 Typically I do use room temperature water but I was feeling lazy

2. stretch and folds - my husband did my stretch and folds (he did a great job) because I cut my thumb making dinner. I combined my dough late in the day and we only ended up doing 3 sets before calling it a night 🌌 when normally I do 4

3. stove - I was also making lunch while I had my bread in the oven. When I turned off the burner for lunch I accidentally turned my stove off instead ⏲️

I've learned that every 'sourdough fail' is just a stepping stone to a better loaf! Beyond the specifics I mentioned – like my cold water blunder and the unexpected oven hiccup – there are so many other common pitfalls that can trip up even experienced bakers. If you're constantly wondering what went wrong with your sourdough, here are a few more areas to consider and some personal tips I've picked up along the way: 1. Your Starter Isn't Active Enough: This is probably the number one culprit for a dense, flat loaf. I used to just assume my starter was ready, but now I always do a float test: drop a small spoonful into a glass of water. If it floats, it's good to go! If it sinks, it needs more time, or perhaps a feeding to perk it up. I've had days where my starter was just sluggish, especially if my kitchen was a bit cold. A warm spot can really help get it bubbly. 2. Under or Over-Proofing: This is a delicate balance. Under-proofed dough won't develop enough gas and will result in a dense crumb. Over-proofed dough, on the other hand, can collapse in the oven because the gluten structure has weakened too much. I've found the poke test to be super helpful: gently poke the dough with a floured finger. If it springs back quickly, it needs more time (under-proofed). If it barely springs back, it's likely over-proofed. If it springs back slowly but leaves a slight indentation, it's usually just right! Trust me, I've had my share of flat pancakes from over-proofing in warmer weather. 3. Not Giving Your Dough Enough Strength (More on Stretch & Folds!): My husband did a great job helping with the stretch and folds, but I've realized just how crucial those repetitions are. They develop the gluten network, which is what gives your bread its structure and those beautiful open crumbs. If you're consistently getting a dense loaf, consider adding an extra set of stretch and folds, or really focusing on gently extending and folding the dough to build that strength. Don't be afraid to get your hands a little sticky! 4. Not Preheating Your Dutch Oven Properly: A super hot Dutch oven is essential for a good 'oven spring' – that initial burst of growth when the bread hits the heat. If your Dutch oven isn't hot enough, your crust won't develop as well, and your loaf might spread rather than rise. I always preheat my oven with the Dutch oven inside for at least 30-45 minutes, sometimes even an hour, to ensure it's scorching hot. 5. Impatience (Especially After Baking!): This one is pure torture, but so important. Waiting for your sourdough to cool completely before slicing is agonizing, but it allows the internal structure to set properly. Slicing it too soon can result in a gummy texture. I've made this mistake countless times, eager to taste my creation, only to regret it. Now, I try to distract myself for at least an hour or two (or even longer for larger loaves) before cutting in. Every loaf is a learning experience, and it's okay to have a 'fail' now and then. The joy is in the process and the delicious (even if imperfect) results that come from figuring out what went wrong with your sourdough and trying again!
