My first homemade yellow curry paste ๐Ÿ˜Œโค๏ธ

I attempted to make my own yellow curry paste for the first time๐Ÿ˜Œ

Next time I will probably use a mortar and pestle to grind everything down โค๏ธ

I think it turned out pretty good although I will be practicing this one a lot more because I definitely want to perfect my own curry paste ๐Ÿ™‚๏ฟผ๏ฟผ

Here are the ingredients that I used:๏ฟผ

๐Ÿ› Crispy Chicken & Mushroom Yellow Curry

Time: 40 mins | Serves: 2

1. The Crispy Chicken

* Pat 4 chicken drumsticks dry. Toss with oil, salt, and 1 tsp cornstarch.

* Air Fry: 200ยฐC (400ยฐF) for 20โ€“25 mins until skin is golden-shattered.

2. The Mushroom Curry

* Sautรฉ: Brown 250g mushrooms; remove and set aside.

* Paste: Fry 2โ€“3 tbsp curry paste with a splash of coconut milk (1 can total).

* Simmer: Add remaining milk, 1 cubed potato, onion, and 1 sliced bell pepper. Simmer 15 mins.

* Finish: Fold mushrooms back in. Season with fish sauce, soy sauce and honey

3. Serve

* Garnish with chopped green onions and nestle the crispy drumsticks on top.
