Creamy cabbage soup
Velvety Smooth Creamy Cabbage Soup🌿🥣✨
Ingredients:
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 head of cabbage, chopped
2 carrots, peeled and diced
2 stalks celery, diced
4 cups vegetable broth
1 cup heavy cream
1 teaspoon dried thyme
Salt and pepper to taste
1/2 teaspoon paprika (optional for a hint of smokiness)
Fresh parsley, chopped (for garnish)
Directions:
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent and fragrant, about 5 minutes.
Add the chopped cabbage, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables start to soften, about 10 minutes.
Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the vegetables are tender.
Stir in the heavy cream, thyme, salt, pepper, and paprika (if using). Cook for another 5 minutes, allowing the soup to heat through but not boil.
Use an immersion blender to blend the soup until smooth, or carefully transfer the soup in batches to a blender to puree.
Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
