Spicy Pearl Couscous Salad 🥗 🍋

This salad is fresh, colorful, and super satisfying. It’s made with chewy pearl couscous, crunchy veggies like cucumber and bell pepper, juicy cherry tomatoes, olives, and creamy feta. Tossed with chickpeas and plenty of fresh herbs, then finished with a tangy lemon-olive oil dressing. It’s light but filling — perfect for BBQs, lunches, or just keeping in the fridge for a quick, tasty bite.

Serves ~8 as a side, 4–6 as a main

📝 Ingredients:

• 2 cups pearl couscous

• 3 cups water or vegetable broth (for cooking couscous)

• 1.5 cups cherry tomatoes, halved

• 1 large cucumber, diced

• 1 red bell pepper, diced

• ½ red onion, finely chopped

• ¾ cup feta cheese, crumbled

• ½ cup Kalamata olives, sliced

• 2 Glove of Garlic

• ½ cup fresh parsley, chopped

• ¼ cup fresh mint or basil (optional but great)

• Zest + juice of 1–2 lemons

• ⅓ cup extra virgin olive oil

• 1 tsp tomato paste + 1 tsp chili paste

• Salt & pepper, to taste

• Optional: ½ tsp cumin or sumac for a Middle Eastern flavor twist

👩‍🍳 Instructions:

1. Cook the pearl couscous:

• In a pot, sauté dry couscous with a drizzle of olive oil for 2–3 minutes until slightly golden.

• Add broth/water and a pinch of salt. Bring to a boil, then simmer ~10 minutes until tender.

• Drain any excess liquid and let it cool (spread it on a baking sheet to cool faster).

2. Chop and prep all vegetables and herbs.

3. Make the dressing:

• In a small pan l, whisk together chopped Garlic , zest, olive oil, tomato paste , hot chili sauce, salt, pepper, and optional spices.

4. Assemble the salad:

• In a large bowl, combine cooled couscous, veggies, chickpeas, herbs, and olives.

• Pour in the dressing and toss well.

• Gently fold in crumbled feta at the end.

5. Let it sit (if possible):

• Chill for at least 30 minutes before serving — flavors deepen beautifully.
