BUDAE JJIGAE (ARMY STEW)

My family’s version of this popular Korean dish 😋

Busy weeknights = one pot meals that are delicious and filling. 🥘

My favorite part of this dish is you can get creative and add or takeout whatever makes you happy 🍄‍🟫

My ingredients:

-Three packs of ramen (one pack of seasoning)

-Chicken bouillon

-Kimchi

-Baby Bella mushrooms

-Tofu

-Spam

-American cheese slices

-Eggs

-Green onion

1. Prep all of your ingredients. Cut up your green onion, slice the tofu, slice your spam, and if you’re fancy, this is when I put those pretty little decorative cuts on my mushrooms.

2. I use the pan pictured and fill it with water. Bring that to a rolling boil and while you’re waiting, cook up your spam in a different pan and place it to the side. Next, put in your bouillon with one packet of chicken ramen seasoning.

3. Add the mushrooms first since they will take the longest and once they begin to soften a bit, add your noodles, kimchi, and crack your eggs directly into the pan.

4. Once the eggs are close to the desired doneness, add the tofu, cooked spam, and lay your American cheese slices over the top. Once melted, top with green onions and serve!

I like to have cooked white rice on the side and gyoza but truly, this is a very flexible dish where you can showcase your creativity.
