i totally get wanting something simple… believe me, i’m all about quick & easy recipes !!! but that doesn’t mean protein should get left behind !
these chicken cottage cheese quesadillas have almost 50g OF PROTEIN and just over 500 cals… that’s INSANE !!!!!!!
here’s how to make them:
1. mix 1/2 cup cottage cheese with 3oz shredded chicken (i have a vid on my page for how i meal prep mine — so yummy & SO convenient to keep in the fridge !)
2. heat up your fav tortilla (i’m using @coyote cassava flour) on a skillet
3. sprinkle 3/8 cup shredded cheese over the tortilla, then add your mixture on one side
4. fold, flip, and cook until everything is melted & stuck together
5. slice it up, add your favorite toppings, and ENJOY !
