This plant-based variation brings a fresh, vegan-friendly approach without sacrificing the rich flavors that make Soup Joumou so beloved. When preparing this dish, I found that using a variety of winter squash, like butternut or kabocha, can create a natural thickness and sweet undertone that enhances the soup’s depth. Adding extra pasta, as requested in this recipe, makes the soup particularly filling and satisfying, perfect for a hearty meal.
