ingredients:

•rice (i cooked mine on sunday in a big batch to use throughout the week- such a good tip especially if you’re busier throughout the week)

•rinsed black beans

•fire roasted corn (i buy mine frozen from Trader Joe’s and just cook it in a pan over medium heat for a few minutes)

•chile lime chicken: season with Trader Joe’s chile lime seasoning and olive oil. air fry at 400 for 15 minutes, flipping halfway! be sure to check your chickens temp to ensure it’s fully cooked!

•shredded lettuce

•halved cherry tomatoes

•chopped cilantro

•optional: chopped jalapeños for a kick if you like that!

•lime juice

•avocado or cheese (or both- whatever you prefer! i was in the mood for avocado tonight so i went with that but this is totally customizable!)

throw everything into a bowl and you’re good to go!! we’ve got carbs in the rice, protein in the beans and chicken, color from the veggies, and healthy fats in the avocado — this really is the perfect balanced meal!
