Veggie Taco Casserole
2 big zucchini
2 red bell peppers
1lb cooked ground beef
1 can of corn drained
1 can of black beans, rinsed & drained
1 packet of Sieta taco seasoning
1T of minced garlic
Mix everything together and add to a 9x13 casserole dish
Top with shredded Mexican cheese
Bake at 400 for 15-20 minutes
