ingredients:
* 1 persian cucumber, diced
* 1/2 cup cherry tomatoes, quartered
* 1/2 cup kalamata and/or green olives, pitted and quartered
* 1/4 cup greek feta crumbles
* 2 tbsp extra-virgin olive oil
* 2 tbsp apple cider or fresh lemon juice
* 1 tbsp fresh dill
* 1/2 tsp pepper
* 1/4 tsp sea salt
directions:
1. In a medium-small bowl, toss all but the feta together.
