Probably Your Grandma's Southern Fried Potatoes Recipe 🥔
If there’s one side dish I could eat every week, it’s southern fried potatoes. My grandmother made them all the time.. and now every time I make them, I can close my eyes and pretend I'm sitting at her kitchen table.
I don’t measure much when I cook, so these amounts are approximate. I got it honest I guess.
Ingredients
• About 6 medium russet potatoes, washed and diced
• 1/8 cup all-purpose flour
• 1 tbsp cornstarch
• Garlic powder
• Onion powder
• Salt
• Black pepper
• Olive oil (or bacon grease if you’re keeping it extra Southern 😉)
Optional
• 1 small onion, sliced and added before frying
• A sprinkle of blackening seasoning for extra flavor
How I Make Them:
1. Wash and dice the potatoes.
2. Toss with the flour, cornstarch, garlic powder, onion powder, salt, pepper, and a drizzle of olive oil until evenly coated.
3. Heat a cast iron skillet or Dutch oven with enough oil (or bacon grease) to lightly coat the bottom.
4. Add the potatoes and cook over medium heat for about 45 minutes total.
5. Cover for the first 20-25 minutes to help soften the potatoes, then remove the lid for the remaining time so they crisp up. Stir occasionally until they’re golden brown.
Cast iron is my favorite way to make these because it gives the potatoes those crispy edges that are hard to beat.
