🌮 Creamy Chicken Enchiladas 🌮
This is one of my favorite easy dinners! Creamy, cheesy, loaded with seasoned chicken, peppers and onions… and SO good! 🤤
Ingredients
* 2–3 lbs chicken
* 6 burrito-size tortillas
* 2 packets taco seasoning
* 3 bell peppers, sliced
* 1–2 onions, sliced
* 1 can cream of chicken soup
* 1 container sour cream
* 1 bag mozzarella
* 2 bags shredded cheddar
* Oil
* Salt
* Pepper
* Garlic powder
Directions
Season chicken with salt, pepper, garlic powder and ½ packet of taco seasoning. Bake until cooked through, then shred.
Slice your peppers and onions and cook them in a little oil with salt and pepper until softened.
Add the shredded chicken, remaining taco seasoning and a few splashes of water. Mix everything together until nice and moist.
Mix the cream of chicken soup and sour cream together.
Now layer it up!

Bake at 385°F for about 30 minutes, or until bubbly and golden brown on top.
Let it cool for a few minutes, then slice and serve! 🧀🌮🤤
