🍪 Frosted Butter Pecan Cookies Recipe
Ingredients
For the Cookies:
• 1 cup (2 sticks) unsalted butter, softened
• 1 cup light brown sugar, packed
• 1/2 cup granulated sugar
• 2 large eggs
• 2 tsp vanilla extract
• 2 1/4 cups all-purpose flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1 1/2 cups chopped pecans, toasted
For the Frosting:
• 1/2 cup (1 stick) unsalted butter
• 2 cups powdered sugar, sifted
• 2–4 tbsp milk or cream (as needed)
• 1 tsp vanilla extract
• Pinch of salt (optional)
Instructions
🍪 Make the Cookies:
1. Toast the Pecans:
Preheat oven to 300°F (150°C). Spread chopped pecans on a baking sheet and toast for 7–10 minutes. Let them cool.
2. Cream Butter & Sugars:
In a large bowl, beat butter, brown sugar, and granulated sugar together until light and fluffy (2–3 minutes).
3. Add Eggs & Vanilla:
Mix in eggs one at a time, then add vanilla extract.
4. Dry Ingredients:
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients. Stir in toasted pecans.
5. Chill (Optional):
For thicker cookies, chill dough for 30 minutes.
6. Bake:
Preheat oven to 350°F (177°C). Drop dough by rounded tablespoons onto a parchment-lined baking sheet. Bake for 10–12 minutes, until edges are golden. Cool completely before frosting.
🧁 Make the Frosting:
1. Brown the Butter:
In a small saucepan, melt the butter over medium heat. Continue cooking, stirring often, until it foams and turns golden brown with a nutty aroma (about 5 minutes). Remove from heat and cool for 5–10 minutes.
2. Mix Frosting:
In a bowl, whisk together the browned butter, powdered sugar, vanilla, salt, and 2 tablespoons of milk. Add more milk as needed for a spreadable consistency.
3. Frost the Cookies:
