Vegan Chickpea Blondie Recipe 🤌

Looking for a quick healthier snack to crave that sweet tooth look no further… these Chickpea Blondies are so easy and so good…. And yes made with Chickpeas!!!

Ingredients:

• 1 can chickpeas (1.5 cups)

• 1/3 cup organic cashew butter

• 1/2 cup organic maple syrup

• 1/2 tablespoon organic vanilla

• 1/4 teaspoon baking powder

• 1/4 baking soda

• 1/2 teaspoon Celtic Salt

• 1/3 cup chickpea flour

• 1/3 cup Vegan Chocolate chips

Step 1) preheat oven to 350 degrees Fahrenheit and line an 8 X 8 plan with parchment paper

Step 2) open the can of chickpeas, rinse and pat them dry with a clean towel

**the key is to get as much moisture out as possible

Step 3) add chickpeas, nut butter, maple syrup, baking powder, baking soda and Celtic salt in a food processor or blender

Step 4) Blend on high for 1 minute or until smooth with no big lumps remaining

Step 5) add in chickpea flour and blend on high for 15 - 30 seconds to blend evenly

Step 6) remove blade and mix in chocolate chips

** I kept about 4 tablespoons to the side to sprinkle on top **

Step 7) spread batter into pan and sprinkle remaining chocolate chips and a pinch of salt

Step 8) bake for 20-30 mins or until golden brown- the smaller the pan, the thicker the batter so more time may be needed

Blondies can be consumed right away, I prefer to allow mine to cool and chill them in the refrigerator for an hour or more!

Such an easy and healthy snack to satisfy a sweet tooth🤌🏼

**you can replace cashew butter with any other nut butter. The chickpea flour can also be swapped with your flour of choice, I just prefer chickpea flour**
