They're a total game-changer for meal prep and ensuring you get a nutritious start to your day, or even a quick, satisfying snack. Seriously, once you start making these, you'll wonder how you lived without them. The beauty of these egg bites is how incredibly versatile and easy they are to customize. My basic recipe includes eggs, cottage cheese for that extra protein boost, and some simple seasonings like salt, pepper, and chicken bouillon to really bring out the flavor. Don't forget those delicious mozzarella pieces and bacon bits for a yummy, savory kick, topped with a sprinkle of shredded cheese! But you can totally make these your own. Want to pack in some veggies? Try adding finely chopped spinach, bell peppers, or mushrooms to your egg mixture. Just sauté them lightly beforehand to remove excess moisture. For different flavor profiles, swap out the mozzarella for cheddar, feta, or a sprinkle of spicy pepper jack. If you're a fan of other meats, cooked sausage crumbles, diced ham, or even smoked salmon can be fantastic additions. The key is to not overfill your muffin tin cups – about two-thirds full is perfect to prevent overflow as they bake.
