Comfort food: Creamy Tuscan One-Pan Chicken
Savory, garlicky, creamy, and honestly tastes way more expensive than it is.
Ingredients
• 3–4 chicken breasts (or thighs for more flavor)
• Salt, pepper, Italian seasoning
• 2 tbsp olive oil
• 3–4 cloves garlic (minced)
• 1 cup heavy cream
• ½ cup chicken broth
• ½ cup grated parmesan
• 1 cup fresh spinach
• 1/2 cup sun-dried tomatoes (chopped)
• Optional: red pepper flakes for a little kick
Instructions
1. Season & sear chicken
Season both sides with salt, pepper, and Italian seasoning. Sear in olive oil over medium-high heat until golden (about 4–5 min per side). Remove and set aside.
2. Build the flavor
In the same pan, add garlic and cook for about 30 seconds (don’t burn it… garlic turns on you fast).
3. Make the sauce
Pour in chicken broth + heavy cream. Stir and let it simmer.
4. Add the good stuff
Mix in parmesan, sun-dried tomatoes, and spinach. Let it thicken slightly.
5. Bring it home!
Add chicken back into the pan. Spoon sauce over top and simmer another 5–7 minutes until fully cooked.
Serve it with:
• Pasta
• Mashed potatoes
• Rice or even crusty bread
✨ For tender meat ✨
• Lightly pound chicken to an even thickness
• This prevents overcooking (which = toughness)
• Also helps it cook faster and more evenly
This alone will make a noticeable difference.
And that’s it… simple, cozy, and honestly one of those meals that makes you feel like you have your life together for a second. This one is perfect for busy nights but still gives that “I really cooked” energy. If you try it, let me know how it turns out or what you served it with because I’m always looking for new combos 🤍
