Quick dinner tonight, got distracted and over cooked my fish a little 🤭 Still a pretty good meal!!

Ingredients:

✨ 1 bag Truffle Creme Filled Gnocchi

✨ 1 bag Stir Fry Veggies

✨ 3 tbl Garlic

✨ 1/3 cup Milk

✨ 1/2 cup Ricotta Cheese

✨ Salt, Pepper, Total Seasoning — to taste

✨ Mahi Mahi

✨ Lemon Juice

✨ Old Bay

✨ Butter

Instructions:

💥 Cook Gnocci as directed on the packaging, then add in mixed veggie & garlic!

💥 Stir in ricotta cheese & milk

💥 Season to taste

💥 Season Mahi Mahi with lemon juice and Old Bay

💥 Add butter to a hot pan & cook fish on both sides about 5 minutes on each side!

I wanted to share a few extra tips I've learned along the way to make it even better, especially for getting that perfect pan-seared Mahi Mahi fish! First, let's talk about that fish. While my recipe is super simple, the key to juicy Mahi Mahi is not to overdo it. You want that gorgeous, browned and seared surface, but still a tender, flaky interior. My secret? Get your cast iron pan really hot before adding the fish. A little sizzling butter or oil in that hot pan makes all the difference. I usually go for about 3-4 minutes per side for thicker fillets, but it really depends on the thickness. A good rule of thumb is to look for the edges to become opaque and then flip. You can also press gently with a fork; if it flakes easily, it's done! Don't be afraid to pull it off the heat a little early, as it continues to cook for a minute or two off the pan. Sometimes I'll even finish it with a squeeze of fresh lemon juice right in the pan for extra brightness. Now, for the star of the show: the creamy truffle gnocchi.
